Cinnamon Cheesecake Cupcakes!

So it is day 3 of the 3 week detox and for me the hardest part I am having is finding sweets that actually taste good and work for this clean eating plan. I am a girl and there are times when I am just dying to eat some sort of dessert at night and the protein shakes just don't cut it! So I am now creating different High Protein, VERY low carb, low sugar desserts to help me curb the sweet tooth and stick to this program. I hope these dessert recipes help you too and if you have anyone who would enjoy a healthy guilt free dessert please share with them :)

So here's what I've got today is Cinnamon Cheesecake Protein Cupcakes. They actually taste pretty great and are just as easy as any other cupcake to make.

Cupcake Ingredients:
1 Scoop Whey Vanilla Protein Powder (I use Nectar Sweets) or Vanilla Casein for thicker consistency
8 oz. Fat Free Cream Cheese
1/4 Cup Stevia or other natural sweetener
Few Drops of Vanilla Extract
1 Egg White
1 Whole Egg
1 Tsp Cinnamon or Pumpkin Pie Spice
6 oz. Fat. Free Plain Greek Yogurt ( I used Fage)

Mix all ingredients in a blender or you can use a hand held mixer. Spray a muffin pan with non-stick spray. Pour ingredients evenly into muffin pan. Pre-heat oven to 350 degrees and bake for 18-20 minutes or until golden brown. DO NOT OVER COOK! 

Let Cool then top with 1 tbsp Fat Free Greek Yogurt sprinkled with stevia and cinnamon. Or just top with 2 tbsp Fat Free Dairy Free Whipped Cream. Enjoy!

Here is the nutrition info for 1 cupcake if ingredients are spread into 8 cupcakes
Calories: 67 Calories
Fat:<1
Sugar: 1.8g
Carbs: 2.87g
Protein: 7g

Realistically you're probably going to eat 2 of the cakes so your nutrition would be this:
Calories: 134
Fat: 1.2g
Sugars: 3.6
Carbs: 5.6
Protein: 14g

Try it out and see if you like it! The nutrition does not include the topping...the icing will vary depending on if you choose fat free greek yogurt or the whipped topping. 2 tbsp of whipped topping is usually 15 calories.
